The Cellar's recipe kits are formulated for 5-Gallon batches and include all necessary ingredients, plus 50 bottle caps, strainer bags, priming sugar, and an informational sheet featuring the entire recipe and special instructions for brewing each batch. Living and working in Seattle, famous for its concentration of microbreweries, and in Washington, by far the #1 hop-producing state, has both spoiled and educated us. Feel free to ask us about styles or to modify our ingredient kits to your own tastes. Please specify pellet or leaf hops and crushed or uncrushed grains if you have a preference!

India Pale Ale
"Round the Horn IPA." Our most recent (and radical) interpretation of the beer style once shipped around the Cape to the boys in India. This high-alcohol, surprisingly fruity brew has an aggressive flavor which mellows with a few weeks� age. High-alpha bittering hops and plentiful dry hopping lends this brew a citrusy hop nose and lingering bitterness. This recipe is for hop-heads only! American Pale Ale
"Cascade Range Ale." The explosion of microbreweries here in the Northwest has resulted in a Pale Ale style that has somewhat digressed from the English style. Usually hopped at a higher rate than the British Pales, and with American-bred hop varieties like Cascade and Centennial. Our recipe features the distictive citrusy aroma of the Cascade hop. German Kolsch
Greenwood Gold. K�lsch is a light, clean, and delicately balanced ale brewed in the Cologne region of Germany. It is one of the newest beer styles, having been brewed for less than a century. Kolsch brewers produce a golden ale that balances pale malts and subtle noble hops, all framed by a clean crisp body and taste imparted by a lagering process. Cool fermentation with the true k�lsch yeast and cold lagering will produce a beer that tastes and drinks like a clean light lager; a new choice for Summer refreshment.

Porter
"Black Heart Porter." A style steeped in tradition. During the 18th century, bartenders would blend three different beers from three different casks to create a more flavorful, complex beverage. Porter is rumored to have been brewed to replace these �three thread� beers, and named for the workmen that guzzled them. "Shoreline Steamer." A California Common or �Steam� beer (a name coined by Anchor Brewing Co.) refers to a beer brewed with lager yeast at ale temperatures, usually with an ample supply of hops. Belgian Tripel
"Cerberus Tripel." This rare style was originally brewed at the Abbaye Notre Dame du Sacre Coeur, Westmalle. Now there are over 40 breweries producing this style worldwide, and this recipe falls in the middle of three of the more popular brews. The use of Belgian candi sugar and specialty grains with light malt combines to create a complex, alcoholic, yet golden ale with a depth of flavor and aroma that can be rediscovered with every goblet. We highly recommend using the Belgian Trappist liquid yeast with this recipe.

Belgian Witbier
"Blanche de Ballard." A style of Belgian wheat beer enjoying renewed popularity. �Wit� means white, and refers to the light haze that the use of unmalted wheat and oats lend to this beer. This unique style also makes use of coriander and orange peel. To duplicate the authentic slightly sour tang of this style, using the Belgian liquid yeast strain is recommended. There are no finishing hops, so that the aroma and character of the spices and yeast can surface. A complex and refreshing treat to savor in any season.
